Fruit pilaf with rice and dried fruits

Why not experiment and cook pilaf with dried fruits? Such a dish turns out to be sweet, very interesting in taste, quite satisfying and attractive. Loose rice with bright fruit pieces will especially appeal to children. When serving, pilaf can be poured with honey and sprinkled with nuts - this will add benefits and additional shades of taste. So that the cereals do not stick together and give a crumbly texture, we take long-grain rice: white, steamed, brown - choose to taste. For cooking, we recommend using a multicooker - it will greatly simplify the process. However, if it is not there, it will turn out no worse on the stove.

Rice is thoroughly washed in several waters to wash off excess starch. After rinsing, water should be spilled through the clear rice. Place the grains in a bowl and cover with cold water for an hour. Of course, soaking is optional, and you can start cooking pilaf right away. But if you are using brown, unpolished rice, it is better not to ignore the soaking, so the pilaf will cook much faster.

Dried apricots, prunes and raisins are well washed in warm water. Place dried fruits in a separate bowl and fill with water - leave for half an hour to soften.

After soaking, drain the water from the dried fruits and slightly squeeze them out of excess moisture.

After soaking, rinse the rice again, place it in a sieve and let the water drain.

Cut dried dried apricots and prunes into small pieces.

If we cook in a slow cooker, then we heat it up in the “Pilaf” mode. Put a piece of butter in a bowl, melt it and pour the prepared dried fruits. If we cook in a frying pan, then put it on the stove, melt butter over medium heat and put dried fruits in it in the same way.

Next, pour spices for sweet pilaf on top of the dried fruits. It is most convenient to use a ready-made mixture - the flavors of the spices in it are already well balanced. If there is no such mixture, use saffron, cinnamon, barberry, some sweet paprika.

Put prepared rice on top of the spices. Then, carefully, so as not to disturb the layers, pour in hot water in such an amount that it covers the rice by one and a half to two centimeters.

Close the lid of the multicooker and cook the dish in the "Pilaf" mode until the end of the program. If we cook in a frying pan, we also close it with a lid, bring the contents to a boil over high heat, then reduce the heat to a minimum and cook pilaf for about thirty to forty minutes until soft.

We lay out the finished pilaf on portioned plates, pour with honey to taste and serve hot.
