Cold Lithuanian borscht

Cold borscht is widespread in Lithuania. The dish is served chilled with boiled potatoes instead of bread. Cold Lithuanian borscht turns out to be fragrant with a lot of healthy vegetables and herbs.

Prepare food for Lithuanian cold borscht. Boil chicken eggs in advance. Wash and dry cucumbers and herbs thoroughly.

Wash the beets thoroughly and place in a saucepan with a thick bottom, cover with cold water, bring to a boil. Reduce heat and cover. Cook for about an hour. The cooking time for beets depends on their size and quantity.

Choose greens according to your own preferences. I usually take green onions and dill. Finely chop the clean greens. Cut the cucumbers into medium-sized cubes. Peel the boiled chicken eggs and chop finely.

Cool and peel the boiled beets, then grate on a coarse grater and put in a small container.

Put the grated beets in the pan in which you will cook cold borscht and add salt and black pepper. Mix thoroughly. Add chopped cucumbers and chicken eggs, then send in the chopped greens. Add sour cream.
