Kefir cupcake with semolina

For lovers of delicious homemade baking, I propose an easy recipe for a lemon cake with kefir with semolina. Baking with semolina is much healthier than baking with flour, the only thing is that the semolina must first be soaked in a dairy product so that it is not felt in the finished baked goods. So let's get started!

Ingredients

Cooking process

step 1 out of 7
Heat the kefir in the microwave for about 35-40 seconds. Pour semolina into a deep plate and fill it with warm kefir. Leave at room temperature for 30 minutes to swell.
step 2 out of 7
Combine eggs with sugar in a deep bowl and beat them with a mixer until fluffy.
step 3 out of 7
The butter must first be removed from the refrigerator, it must be at room temperature. Add softened butter and swollen semolina with kefir to the beaten eggs and mix well.
step 4 out of 7
We wash the lemon and rub the lemon zest with a fine grater, carefully removing only the yellow part, send it to the dough. Squeeze a tablespoon of juice out of the lemon, quench the soda with lemon juice, add to the dough and mix everything until smooth.
step 5 out of 7
Sift flour into the dough and mix everything well again using a mixer.
step 6 out of 7
Grease the baking dish well with butter and transfer the dough into it. We put the cake to bake in an oven preheated to 180 degrees for 30-35 minutes.
step 7 out of 7
We take the finished cake out of the oven and leave it to cool completely, then transfer it to a dish or board. Before serving, cut into portions and serve, garnished with a lemon wedge. Enjoy your tea!
