Today we are baking an easy-to-prepare yet amazingly delicious nutty muffin. It turns out to be very soft and crumbly on the inside, with a crispy crust and golden nuts on top.

Pre-cool the eggs in the refrigerator for a couple of hours - this way they beat better. Combine eggs with sugar in a deep bowl and beat with a mixer until the volume doubles.

In a saucepan or in the microwave, melt the butter to a liquid state, do not boil. Add butter to eggs, beaten with sugar. Add kefir there.

Dry the walnuts in a pan, so they will be more crispy, then use a knife or blender to grind them not too finely so that they can be felt in the cake.

Sift flour into the dough, add soda and 3/4 of walnuts, leave the rest for sprinkling. Mix thoroughly, the dough should turn out to be a thick consistency.

Grease the form with butter and dust it a little with flour. If the mold is silicone, you do not need to lubricate it.

Transfer the dough into a mold and gently level it with a spatula, sprinkle the cake with walnuts on top. We put to bake in an oven preheated to 180 degrees for 35-40 minutes, check readiness with a skewer, it should come out dry.
