Red currant and gooseberry compote

An assorted compote of gooseberries and red currants will be transparent and with a beautiful pink color. It is prepared without sterilization, which is very convenient for the hostess. The drink will turn out to be natural, without preservatives and dyes, which is important for a children's menu. Mint will give the drink a pleasant freshness. Take unripe berries for this preparation.

Remove inflorescences and stalks from gooseberry berries with small scissors.

Rinse the peeled gooseberries and red currants well with cold water, without separating the berries from the twigs. Measure out the right amount of sugar right away.

Sterilize the cans for the blank over hot steam. Place prepared berries in them and put mint sprigs in each jar.

Boil water in a saucepan and pour boiling water over the berries in jars. Leave the berries for 10 minutes. Then pour the water back into the pot through a special lid and boil it again. Pour boiling water over the berries again for 10 minutes. In a separate saucepan, boil the sugar syrup and pour over the berries after 2 times pouring boiling water over it. Roll up the jars immediately with boiled lids.
