Strawberry jam

The jam is made from berries and fruits boiled in sugar syrup. First of all, it is a well-known dessert. It is used in cooking as an addition to baked goods, curd mousses, cereals and casseroles. To get a thick strawberry jam, you need some kind of gelling agent, pectin, agar-agar or gelatin.

Rinse the strawberries well, tear off the tails and discard them in a colander to dry.

Grind the berries in a blender until smooth.

Add sugar to the strawberry puree, stir and put the mixture on fire. Simmer the strawberry puree until it boils, then turn off the stove and let it cool for 30 minutes.

Dilute the gelatin with a little water and let it swell. Then add the gelatinous mass to the berry mass, stir and put on the fire again, heat, but do not boil. Add citric acid, stir and, as soon as the mixture begins to boil, remove from heat.
