Kystyby on sour cream

Kystyby are traditional Tatar and Bashkir flat cakes, shaped like a crescent moon and usually stuffed with mashed potatoes. It is not difficult to prepare them, and the necessary ingredients can be found in any kitchen. Kystyby can be served for breakfast, dinner or as a hearty snack. Also, these tortillas are great as an addition to various soups.

To prepare the dough, shake eggs, sour cream and salt in a bowl until smooth. Then add the flour previously sifted through a fine sieve in parts.

Knead an elastic dough. Knead it until it stops sticking to hands and surfaces. Roll a ball out of the dough and cover it with a towel. We leave for fifteen to twenty minutes on the table so that the gluten swells.

Peel the potatoes and boil in salted water until cooked. To shorten the cooking time, you can cut the tubers into small pieces. Then we drain the broth, and knead the potatoes in mashed potatoes. Heat the milk until hot and pour it into the puree. Also add butter and salt to taste. Stir until completely homogeneous.

Peel the onions and chop finely with a knife. Fry it in a little vegetable oil until light golden brown. Add fried onions to the mashed potatoes and mix thoroughly. The filling is ready.

In a preheated dry frying pan, fry the prepared dough cakes on both sides. Fry the plates at medium-high temperature for one and a half to two minutes on each side. We make sure that the dough does not burn.
