Kystyby in Tatar style with milk

This is a traditional Tatar dish in the form of a flatbread with mashed potatoes. The products for its preparation are simple and affordable. We will knead the dough for tortillas without adding eggs, only in milk. It turns out to be tender, with a pleasant milky flavor and goes very well with potato filling. Kystyby is great as a hearty breakfast, as well as a quick snack.

Ingredients

Cooking process

step 1 out of 9
To prepare the filling, peel the potatoes, wash them, cut them into small pieces and boil them in salted water until soft.
step 2 out of 9
After cooking, filter the potatoes from the broth. We save part of the broth to add to the finished puree. Knead boiled potatoes with a crush. Pour in the broth in such an amount that the mass does not look dry and becomes a little more homogeneous, but not liquid. Add butter and salt to taste. We mix. You can also add any seasoning you like. Peel the onions and cut them into small pieces. Fry it in a frying pan in a little vegetable oil until transparent and golden brown. Add the onion to the puree and stir. The filling is ready.
step 3 out of 9
Prepare the dough: in a volumetric bowl, mix the egg, warm milk and vegetable oil. Pour salt, granulated sugar into the resulting mixture and shake. Add pre-sifted flour and knead the dough with your hands. Knead the mass until it stops sticking to the surfaces. Roll the finished dough into a ball, cover with a clean towel and set aside to "rest" at room temperature for twenty to thirty minutes.
step 4 out of 9
After the specified time has elapsed, we form a thick roller from the dough and cut it into 7-8 parts. We roll each segment into a lump and roll it out with a rolling pin into a thin circle. The approximate diameter is 15 centimeters.
step 5 out of 9
In a dry hot frying pan, fry the cakes on both sides until blush. They are fried quickly - literally for one and a half to two minutes on each side.
step 6 out of 9
Put mashed potatoes with onions on half a fried flatbread.
step 7 out of 9
Cover the filling with the other half - we get a semicircle.
step 8 out of 9
We put the kystyby with a slide on a platter - you can already serve it.
step 9 out of 9
Or you can go a little further and fry the ready-made kystyby until a pronounced crisp. To do this, heat the vegetable oil in a frying pan and bring the kystyby until golden brown on each side. Serve hot.

Bon Appetit!
