Carrot cake with nuts is perfect for breakfast or afternoon tea - it is hearty and healthy. Carrots are rich in vitamins, nuts are very nutritious. Even children will not refuse a piece of such delicate, moist, aromatic pastries.

We carefully sort the walnuts, clean them of possible impurities. Pour onto a board and cut into medium-sized pieces with a knife. The nuts should feel in the finished muffin, don't crush them into crumbs.

Wash the carrots, peel from the top, grate on a fine grater. Squeeze out excess juice so that the cake is not too wet and heavy.

Break the eggs into a wide bowl and beat them a little with a whisk.

Pour granulated sugar and vanillin into the eggs, mix thoroughly with a whisk.

We spread the carrots to the resulting mixture, mix everything thoroughly with a spoon.

Pour the vegetable oil in a thin stream into the carrot-egg mixture, mix well until the ingredients are completely mixed.

Sift flour, salt and baking powder. Add these dry ingredients in portions to the carrot mixture, stirring the resulting dough thoroughly each time.
