Okroshka on water with vinegar

Okroshka is a delicious summer soup that does not require boiling. It combines meat products, boiled potatoes, fresh vegetables and herbs. This soup is perfect for a snack on a hot summer day. Hearty and refreshing, it perfectly diversifies your summer menu and competes with fridge and gazpacho.

Peel the potatoes, rinse them, put them in a saucepan and fill them with water. We put on fire and boil until cooked for 20-25 minutes. When ready, remove from heat, drain the remaining water. We take out the potatoes on a plate and let cool. Cut the cooled potatoes into small cubes.

We wash the eggs under water and put them in a saucepan. Fill with water, put on fire and boil for 10-12 minutes until tender. Then remove from heat, drain, pour cold water and leave to cool for 2-3 minutes. After that, we clean the eggs from the shell and cut them into small cubes.

Cut the boiled sausage into small cubes.

We wash the cucumbers under water, dry and cut into small cubes.

We wash the green onions, dry them a little and chop them into small pieces.
