Rinse the apples, dry and cut into quarters. Cut out the seed pods. Cut the quarters into thin slices. To prevent the apple slices from darkening, sprinkle them with lemon juice.

Break the eggs into a wide bowl, add sugar and beat with a mixer on high speed. You should get a lush, thick, almost white head. While whisking, pour in a little milk and vanilla extract.

Pour pre-sifted flour into the egg-milk mixture and mix gently with a whisk by hand or with a mixer at low speed. The consistency of the dough turns out to be quite liquid, fluid, like pancakes.
