Azerbaijani-style sweet pilaf with dried fruits

Everyone knows that pilaf is a delicious rice dish with nice pieces of meat, onions, carrots and spices, but there is an option for sweet pilaf with dried fruits. In this recipe, you are invited to cook such a pilaf in Azerbaijani style - with rice, dried apricots, dogwood, raisins, nuts, baked in crispy pita bread, which retains the shape and crumbness of sweet pilaf. Some housewives prepare the flatbread (kazmag) themselves. Pilaf is cooked without meat and will be a wonderful dish for you both for a children's party and for a lean table.

First, cook the rice for pilaf. Boil 3 liters of clean water in a saucepan, add 2 tbsp. tablespoons of salt, pour the washed rice into the water and cook it for 10 minutes so that the rice does not boil. Then place the rice in a colander to drain all the water.

Cover the cauldron with sheets of pita bread, greasing it with melted butter. Lavash can be cut into wide strips. Place the cauldron on a small fire. Then put the prepared rice on the pita bread.

Then close the lid tightly with a clean towel underneath. This will make the rice very crumbly. Cook the rice in a cauldron in a pita bread for 30 minutes and over low heat.

During this time, grind the saffron well with a pinch of salt in a mortar.

Then add a little boiling water to the saffron, stir and let it brew.

After the cooking time has elapsed, remove the cauldron lid. Pour over the rice with melted butter and saffron tincture. Cover the pilaf again with a lid and a towel and simmer it for another 30 minutes.

During this time, prepare dried fruits for pilaf. Rinse them well, transfer to a separate bowl along with the nuts and place in a water bath. Then sprinkle them with a little salt and add ghee. Cover the dried fruit with a lid and simmer for a while until it is soft enough.

To serve, heat a large beautiful dish a little and gently transfer the rice in the pita bread to it. Put dried fruits with nuts simmered in oil on top of the rice. Sweet pilaf with dried fruits in Azerbaijani style is ready, you can serve it to the table.
