Solyanka for the winter without tomatoes

Today we will reveal to you the secret of making a delicious vegetable hodgepodge with the addition of mushrooms. The basis of the hodgepodge is cabbage, and vegetables such as onions and carrots complement it. Tomatoes are often added to the hodgepodge, but we will replace them with tomato sauce - it will turn out no worse. Having closed several jars of the hodgepodge according to our recipe, you can easily prepare a soup based on it, just adding the ready-made hodgepodge to the meat or vegetable broth and seasoning it with spices.

We wash the cabbage under running water and finely chop it with a special knife.

Then put the cabbage in a heat-resistant dish and fill it with boiling water, leave it for 15-20 minutes so that the bitterness comes out of it.

Boil the mushrooms. Peel the onion, rinse it and chop it into small cubes. We clean the carrots, wash and rub on a coarse grater.

Put the onion in a preheated pan with vegetable oil and fry until golden brown. Then transfer the onion to a deep saucepan.

Put the carrots in a preheated pan with vegetable oil and sauté for 3-4 minutes, then send them to the pan with the onions.

Drain the water from the cabbage, squeeze it gently and put it in a saucepan with vegetables, add vegetable oil, mix. We put the pan on medium heat, bring the vegetables to a boil, then reduce the heat and simmer them under the lid for 35-40 minutes.

After the time has elapsed, add mushrooms, salt and sugar, tomato sauce to the pan, mix and continue to simmer the vegetables for another 30 minutes.

Then add bay leaf and pepper to the hodgepodge, mix, simmer for another 10 minutes. Then add vinegar to the hodgepodge, mix the vegetables well again and remove the pan from heat.

We put the finished hot hodgepodge in sterilized jars, close with boiled lids and leave at room temperature until it cools completely. Then we put the jars with the hodgepodge in a cool, dark place for storage.
