The pizza dough according to this recipe has a pronounced dense crust and a porous crumb. When baking, it is very important not to keep the product in the oven for a long time, otherwise the base will be tough, and the filling itself is most likely overdried. We preheat the oven to a high temperature of 200-210 degrees, and place the pizza on the middle-lower level. The dough will have time to quickly bake until tender and not dry out, and the surface filling will remain juicy.

We heat the water in the specified amount to a warm state. The temperature of the liquid should be approximately thirty-five to forty degrees. Put water in a bowl and add live yeast.

Stir the yeast with water until completely homogeneous. We introduce salt and granulated sugar into the resulting mixture, dissolve them.

The next step is to pour in the olive oil. Of course, you can use refined vegetable, but it is olive that gives the dough traditional Italian flavor notes. We mix everything together.

Sift the flour through a fine sieve directly into the bowl with the liquid ingredients. Sifting can be neglected, this will save time. Still, this step adds extra air to the dough, and it turns out to be more porous.

After adding flour, start kneading the dough. First, stir with a spoon and then go to manual work. We knead the mass for five to six minutes so that it completely ceases to stick to the hands and the working surface. Roll the prepared dough into a ball and place it in a bowl. Cover with a clean towel and place in a warm place. After an hour, the dough will rise one and a half to two times and become spongy at the cut.

Knead the dough lightly and cut it into the required number of pieces. From the amount of dough prepared, three small pizzas or two large ones are obtained. Roll each on a floured surface into a thin layer.

Place the rolled dough on a greased baking sheet and place the planned filling on top. We bake pizza on such a dough in an oven preheated to 200 degrees for fifteen to twenty minutes. It is advisable to place the baking sheet on the middle-lower level in the "top-bottom" heating mode.
