Strawberry jam without boiling berries

Many people prefer to cook strawberry jam without boiling the berries themselves, because otherwise they lose their shape and color, become pale, wrinkled or boiled in mashed potatoes. To prevent this from happening, a sugar syrup is prepared, into which strawberries are briefly dipped several times in order to heat them.

Sort the strawberries, wash. Add granulated sugar, shake slightly and refrigerate for 12 hours. Juice will come out of the berries, the sugar will begin to melt.

After a specified period of time, remove all the strawberries with a slotted spoon and transfer to a separate bowl. Mix the syrup itself.

Bring the sugar syrup to a boil, boil for about 5 minutes. Return the berries to the syrup and remove from the stove. Allow the mixture to cool completely and stand for another 3 hours. Then repeat all the manipulations. Allow to cool again.
