Strawberry jam through a meat grinder

Before you start cooking, pass the berries through a meat grinder. You will get a homogeneous thick jam, which you can put on a bun and make a filling for pies.

Sort the strawberries, remove the green tails, wash and discard in a colander to get rid of excess liquid.

Wash the lemons. Squeeze the juice out of them, and grate the zest on a fine grater.

Pass the strawberries through a meat grinder. Transfer the puree to a saucepan, add sugar, mix well and place the container on the stove. Bring the jam to a boil over medium heat, reduce heat and, stirring constantly, cook for 25-30 minutes. If foam appears on the surface, remove it with a spoon.

Add lemon juice and lemon zest, stir, cook for another 5-10 minutes. Spread the hot jam in sterilized jars, close them tightly with sterilized lids, turn the baths upside down, cover with a blanket and leave to cool.
