To make strawberry jelly for the winter, you don't need to use gelatin. There is a great herbal alternative - agar agar. The jelly will thicken perfectly and acquire a beautiful, dense consistency. This jelly is ideal for decorating and accompanying various desserts and pastries.

Wash the strawberries well in cool water, remove the sepals. Sprinkle the washed berries on a clean towel and let the excess moisture dry after rinsing.

Put the prepared berries in a clean cooking container and turn them into puree with an immersion blender. You can leave some of the berries not completely chopped. In this case, inclusions of strawberry pulp will be found in the jelly. This is a matter of taste and does not affect solidification in any way. Mix agar-agar and water in a separate container. Set aside until the moment of use.

Put the strawberry puree on the stove and bring to a boil. Remove the foam. Pour in granulated sugar, mix until it dissolves. Cook for two to three minutes with stirring.

Then add the soaked agar agar, stirring it well again before that. After adding, mix and cook for another two to three minutes. Done - can be removed from the stove.

Banks and lids are thoroughly washed and sterilized in any way possible. Let the container dry completely. Pour hot jelly into prepared jars and close them with dry lids. Let the conservation cool. We put the cooled jars of jelly into the cellar or refrigerator for storage.
